If there is one thing I love more than yoga, it is the food I eat while traveling. I love food. I mean I really love food. If I don’t get to try new and delicious food while traveling then it doesn’t count as traveling.
I felt a bit lost writing this post as I didn’t know how I should organize it. Should this be strictly smoothies or everything I ate at that Irish food festival a few years back? After much contemplation, I decided to make this post the first of a food series. Because you can’t eat all of this in one day and I don’t want to get your hopes up.
I have organized this food series by country. This month’s being: Costa Rica.
So let’s get started!
I traveled to Costa Rica this past summer, only knowing a few Spanish terms. The most important being (in my opinion): Donde está los aguacates? AKA Where are the avocados?
I made avocado toast every morning for breakfast and snacked on guacamole on the beach on my days off. If you don’t eat the guac in Costa Rica, did you really go to Costa Rica?
Aguacate Toast Recipe:
♦2 Slices Whole Wheat Bread
♦1 Handful of Chia Seed (optional)
♦2 Dashes of Salt (optional)
♦Clean, Peel, and Slice Avocado
♦Chop up avocado twice
♦Stir in the chia seed
♦Gently smash the avocado while adding in dashes of salt. Chef’s Note: Avocado’s in Costa Rica are sweeter than your usual avocado, this is why salt is recommended
♦Toast slices of bread on a stove top until they turn a nice golden brown. I always do it on the stove rather than a toaster. This way it gets the perfect crunch rather than burned in the toaster
♦Once toasted, spread the avocado onto your toast
♦Eat your toast and appreciate the avocado
♦It is a gift from the gods.
Peanut Butter Banana Toast
I know what you’re thinking. Typical. However, bananas in Costa Rica taste like ice cream. I’m not joking. They’re so sweet and filling, plus the perfect healthy protein packed snack!
♦1 whole banana from Costa Rica (no exceptions)
♦2 tablespoons crunchy peanut butter
♦2 slices of whole wheat bread
♦Toast your bread. (See above recipe for toasting directions)
♦Chop up the banana from Costa Rica into 14 small slices
♦Smooth the crunchy peanut butter onto your two slices of toast
♦Place seven slices of banana on each slice
♦Enjoy. Enjoy. Enjoy!
Jungle Mojito For Two.
This was a sweet surprise! My first day in Montezuma, some friends and I found limes hanging in trees over the streets. So the only logical thing to do was make mojitos! They turned out perfectly and I want to share my secret recipe with you!
♦One bag of sugar non processed
♦One bottle of vodka
♦One bottle of club soda
♦One small bag of ice
Your favorite music (to play in the background)
♦Juice limes into a blender
♦Add 1 cup non processed sugar
♦Two large splashes of vodka
♦Pour bottle of club soda into blender
♦Add two handfuls of ice to blender
♦Blend for 30 seconds
♦Add one more small handful of ice
♦Blend until it is perfectly icy
♦Pour your jungle mojito into a class
Two recommended restaurants:
Everything is Farm to Table. All the food is organic, fresh, and beautiful displayed. I recommend trying the hummus plate! The Goat House is located outside Ballena Beach right on the interstate.
They have the BEST veggie burgers I have ever had in my entire life. I truly mean that. These veggie burgers are top notch! Plus the meal comes with homemade plantain chips and yucca fries! Do not miss out on this goodness! They’re located in Uvita across from the Farmer’s Market.
The main reason I decided to start this food series, is that I don’t see enough of it. I know every traveler loves eating, so we should share those experiences with one another. One of my favorite travel experiences was cooking Christmas Eve dinner with my girlfriends in Paris. Eating a meal isn’t just about eating it. It’s about making the memory of it. So call your friends, pick a country, make an ethnic dish, and sit down and enjoy that meal together. 9/10 times the memories you make are WAY better than the food served and that’s okay. That’s what it’s about!
