Today I write to you from the mystical Montezuma!
There are rocky beaches, waterfalls, and natural Jacuzzi’s surrounded by ocean waves and magic.
This week I am sharing with you my yummy jungle pasta recipe, hiking adventures and arm balances to go with it!
What I love about traveling is that I get to cook and share my meals with other people. That’s how I’ve made some of my truest travel friends and how I’ve learned about new cultures.
Pasta is one of my main food groups in Costa Rica simply because it’s affordable and I can make it into any dish. I hope you enjoy it as much as I did!
• 1 bag of linguine pasta
• ½ can of pasta sauce
• 3 handfuls of spinach
• 1 medium tomato
• 1 clove of garlic
• ½ eggplant
• ½ onion
• Pick delicious veggies from the garden
• Fill a pot with 3-4 cups of water
• Bring water to a boil
• While waiting for boil, clean and chop up all the delicious veggies
• Put linguine in the pot with ½ of the noodle sticking out the top
• Let cook for 9-15 minutes
• Put the sauce with the chopped veggies in a separate skillet until sauce is warmed and delicious veggies soft
• Strain the pasta
• Toss the veggie sauce on top
• Enjoy your healthy and delicious meal
I climbed waterfalls today and smiled and laughed, while water was pouring down on me and all I could think and say and feel is that I am alive! There is something truly magical about waterfalls in Costa Rica. I am certain that the waterfalls hold all the secrets to life and if you listen closely you might just hear one!
So how do you prepare your body for hiking waterfalls?
An arm balance sequence would be best!
I found myself using my arms and upper body strength to swing from tree branch to tree branch and climb huge rocks and climb down cliffs. Costa Rica waterfalls are no joke.
So here is one of my favorite arm balances:
Crow Pose (Bakasana)
• Start in a low squat, hands at heart center
• Exhale all the air out and inhale a new fresh breath
• Bring your hands down to the mat, shoulder width apart
• Lift your hips high towards the sky
• Come up onto your tiptoes
• Knees bend and go into the triceps or where the elbows crease
• Feet are off the floor
• Engage your core to bring your chest forward
• Neck is lengthened
• Bring the gaze slightly forward between the hands
• Inhale and exhale
There is some craziness happening in the world right now and I’m sure if you log into Facebook or any social media, then you will find out. My suggestion is don’t give into it. Don’t let your light go out because everyone around you is spreading the negativity. I think the problem with the world right now is that we don’t love ourselves as individuals. We are so worried about “the world” when we ourselves are part of the world.
We need more light and joy in the world, so I’ve decided to bring that to you.

The moment you find yourself falling in love with yourself, document it.
The time of day, the season, the clothes you are wearing, the people around you, the feeling in your heart.
And tell someone that you love them and be open to that love when they say it back.
You my darlings, have to be the love in this world, especially now.
